without compromising what makes scampi, scampi- the garlic.

Note to EVERYONE who wants to attempt this recipe: IF you do NOT like drinking IPAs, you will hate using it in the recipe. In fact, only use an IPA if your palate has an affinity for bitterness. OTHERWISE, substitute with a hefeweizen or a Belgian white ale.

If you do attempt the use the IPA, balance out the bitterness by adding heat (red pepper), acid (lemon juice) and salt (salt & plenty of butter)… Mmmmm. It is really good.

First of all, as a former restaurant owner and cook… Great recipe. I happen to have all the ingredients, except the beer. I’m not really a fan of hoppy beer. Any other suggestions,Scampi Master?
