In fact, only use an IPA if your palate has an affinity for bitterness. OTHERWISE, substitute with a hefeweizen or a Belgian white ale. If you do attempt the use the IPA, balance out the bitterness by adding heat (red pepper), acid (lemon juice) and salt (salt & plenty of butter)... Mmmmm. It is really good.
